This creamy vegetable and rice bake is a great way to use up leftover vegies before they go off.

Ingredients

  • 2 carrots diced
  • 1 zucchini diced
  • 1 potato diced
  • 1/2 cup pumpkin diced
  • 1 onion diced
  • 1 sweet potato diced
  • 3 squash quartered
  • 150ml cream
  • 2 tbs butter
  • 1 cup cheese shredded
  • 1 cup water
  • 120g rice
  • 1 tsp garlic minced

Method

  • Preheat oven to 180C.
  • Add all vegetables to a baking dish.
  • How to prep onions.
  • Add cream, butter, water and rice to the baking dish, and mix well.
  • Cook for 30 to 45 minutes. Sprinkle cheese over the top and cook for a further 10 minutes, or until golden brown.
  • Stand for approximately 10 minutes to slightly cool and allow liquid to thicken.
